2 ripe tomatoes, seeded1 large beet, shredded4 cups mixed salad greens, torn4 tablespoons fresh basil, chopped2 tablespoons lime juice2 tablespoons maple syrup1 tablespoon extra virgin olive oil1/4 teaspoon salt

| Cut tomatoes in half crosswise. Gently squeeze out the seeds and cut tomato into thin strips.
Place in a large bowl along with the beet and lettuce greens. Set aside.
Combine basil, lime juice, maple syrup, olive oil and salt in a jar; cover and shake vigorously.
Pour over lettuce-beet mixture and toss gently.
