Meatless Monday Recipe

Meatless Monday is a worldwide movement to help people reduce their meat consumption by 15% (one day per week) and thus improve their personal health and the health of the planet. The U.N. Food & Agriculture Organization reports that animal agriculture generates a whopping 18% of the world’s green gasses. Going meatless just one day a week can make a huge difference towards reducing your carbon footprint.

Need Inspiration? Every Monday Rainbow Foods will release a meat-free main dish as part of our Meatless Monday campaign. Each recipe published is one brought forward by a member of our staff.
